ACTIVATION BENEFITS

 

To help you get the most out of pecans, our activation method of long soaking and slowly dehydrating at low temperatures, helps release the bioavailability of their vitamins and minerals. Health experts recommend consuming around 30g of nuts most days of the weeks - that equals around 15 organic activated pecans per day! Here are some advantages of incorporating activated pecans into your diet:

BANANA CHOC CHUNK PECAN LOAF

A moist, flavourful loaf with the sweetness of ripe bananas and the crunch of activated pecans and chocolate chunks.

INGREDIENTS:

  • 3/4 Cup organic rapadura sugar
  • 1/3 Cup organic coconut oil, melted
  • 1 Cup mashed banana
  • 2 Large free-range eggs
  • 1/2 Cup organic coconut yogurt
  • 1/4 Organic maple syrup (optional)
  • 1 tbsp Vanilla extract
  • 1 1/2 Cups organic unbleached plain flour
  • 1 tbsp Aluminium-free baking powder
  • 1/2 tsp Himalayan salt
  • 80g Dark Chocolate, broken into chunks
  • 3/4 Cup 2die4 Activated Organic Pecans, chopped

    METHOD:

    1. Preheat oven to 180 and line a loaf pan with baking paper.

    2. With an electric beater, cream sugar and coconut oil until smooth. Add the banana, egg, yogurt, maple syrup and vanilla, mix until just combined.

    3. Whisk together the flour, baking powder and salt in a small bowl. Add the chocolate and 2die4 Activated Organic Pecans into the flour and stir through.

    4. Gently fold the flour mixture into the banana until just combined.

    5. Pour the batter into the prepared loaf tin and bake for 60 minutes or until a cake tester comes out clean. Remove from the oven and cool on a wire rack

     

     

    ACTIVATED PECAN & HONEY OVERNIGHT OATS

    An easy, nutritious breakfast option prepared the night before, with activated pecans for added texture.

    INGREDIENTS:

    • 1/2 Cup organic rolled oats
    • 1 Cup organic milk (your choice)
    • ½ Cup 2die4 Activated Organic Pecans (chopped)
    • 1 tbsp Organic chia seeds
    • 1 Scoop of vanilla protein powder (optional)
    • 1/2 tsp Organic cinnamon
    • 1/2 tsp Vanilla extract
    • 2 tsp Organic raw honey

    TOPPINGS

    METHOD:

    1. In a jar or container with a lid, add all ingredients and stir or shake to combine.
    2. Place in the fridge, with the lid on and leave overnight.
    3. Before eating, top with chopped activated pecans, fresh blueberries and an extra drizzle of honey and enjoy.

    Note: If you prefer warm oats, simply put in the microwave for 30 secs to heat.

     

    ACTIVATED PECAN PIE

    A classic dessert made with wholesome ingredients and a naturally sweetened filling that highlights the rich, unique taste of activated pecans.

    INGREDIENTS:

    • Pastry
    • 2 Cups Organic Unbleached White All-Purpose Flour
    • 185g Organic Coconut Butter
    • 1 tsp Lemon Juice
    • 2 tbsp Water

      FILLING

      • 150g 2die4 Activated Organic Pecans
      • 90g Organic Coconut Butter, melted
      • ½ cup Organic Maple Syrup
      • ½ cup Organic Rapadura Sugar, firmly packed
      • 2 Eggs, beaten
      • ¼ cup (35g) Organic Unbleached White All-Purpose Flour
      • ¼ cup (35g) Self-raising Flour

      TOPPING

      • ½ Cup crushed Activated Organic Pecans + 12 halves

      METHOD: 

      PASTRY

      • Sift icing sugar and flour into a bowl. Using fingertips, rub butter into flour until it gives a bread crumb consistency.
      • Add lemon juice and water to firm dough. Knead until smooth, you may need to add extra flour or water depending on the consistency. Refrigerate for 30 minutes.
      • Preheat oven to 200C
      • Grease a flat 23cm tin. Roll dough to fit and press dough into sides of the tin. Refrigerate for another 15 minutes.
      • Place a piece of baking paper over the pastry and weigh down with cooking weights or rice.
      • Bake for 15 minutes.
      • Remove weights and paper.

      FILLING

      • Reduce oven heat to 180C
      • Sprinkle pecans evenly over cooked pastry base.
      • In a saucepan melt butter, using a whisk stir in maple syrup and eggs. Sift in flours and mix until smooth. Pour mixture over pecans.
      • Bake for 30 minutes, until firm.
      • Remove from oven.

      TOPPING

      • While the pie is still warm and soft, sprinkle crushed pecans evenly over the pie. Decorate with 12 pecan halves.
      • Eat warm or place in fridge to cool & enjoy with ice cream.
